黃原膠是一種植物基增稠劑和穩定劑。它以細菌Xanthomonas campestris命名，在該描述中起著至關重要的作用。

從技術上講，黃原膠是一種多醣，這只是說“一連串的多種糖”的一種奇特的方式。

為了產生黃原膠，使黃單胞菌（Xanthomonas campestris）細菌在糖上發酵。變成凝膠，然後將其乾燥並研磨以產生粉末物質。

在無麩質烘焙的世界中，黃原膠扮演著模仿麩質的關鍵角色。在烘焙過程中，麵筋使麵團“變硬”。它賦予麵團彈性以及粘度。
